The olives used in all of our products have been hand harvested at the peak of perfection and maturity. They are cold washed and hand selected for size and most appropriate use.

Choice of:

  • Sundried Black Olives (salt-free; strong concentrated flavor with some bitterness, great for reconstitution or cuisine preparation)
  • Spiced Jumbo Green Olives in brine (can be eaten as is in appetizers, salads, spaghettis, canapés, etc...)
  • Classic Jumbo Green Olives in brine (can be eaten as is in appetizers, salads, spaghettis, canapés, etc...)
  • Black Botija Olives in brine (can be eaten as is in appetizers, salads, spaghettis, canapés, etc...)

    History of our raw organic olives: On a high desert plain just 100 miles south of Lima, a 50-hectare plantation was established in the late eighties by Jose Vico & Family and now presently employ over 30 families. The olive products are grown, harvested, and processed with extraordinary care and do not include any chemical intervention whatsoever. Mr. Vico's farm has never used any chemicals or insecticides. The fertilizers are naturally grown throughout the plantation to create a rich bed of humus and a permaculture environment has been created with the integration of Eucalyptus, Casuarina, Pomegranates and Citrus varieties, thereby maintaining the highest degree of bio diversity possible.

    Our olives are certified organic by the BioLatina Organization in Lima, Peru, which is IFOAM and USDA/NOP approved and in compliance with EEC Regulation 2092/91 "Organic Production of Agricultural Products. Our raw and organic olives are also certified Kosher for Passover & Parve by Rabbi Guillermo Bronstein (President of the Asamblea Rabinica Latinoamericana), Certification Contract #5761 0 5763.

Plump and juicy, with a rich, wholesome tang, our Botija olives are grown on tech first certified organic farm in Peru. Tree-ripened to perfection, they are hand-picked and naturally cured in spring water and sea salt (instead of the bitter chemicals used by most olive makers). Rich with heart-healthy oil and phytonutrients, these delicious raw organic olives make a great addition to any mediterranean dish, from pasta sauces to Spanish or Greek cuisine ... or just to snack out of hand.

Raw & Organic Sundried Black Olives:

The ingredients list is simple: just pure sundried & certified organic black olives and nothing else. The taste is very pronounced (on the bitter side) because no salt or chemicals were used to cure these delectable connoisseur olives so these particular olives may not be for all taste buds (the other two olives below are more like what most people are familiar with). This is in distinct contrast to how sundried black olives are usually cured -- with tons of salt, so what you are tasting there is the salt and/or the chemicals used to process the olives and not the actual olives themselves. A wonderful addition to any flavor of raw cuisine, our Raw & Organic Sundried Black Olives are best used to prepare gourmet raw savory dishes as opposed to eating out of hand (although true olive connoisseurs will savor the rarefied full-bodied taste & flavor of our sundried black olives). Raw & Organic Botija Olives:

Though classified as a black olive, the Botija olives are actually a vibrant purplish red in color when cured (shown top left). Soft, juicy, and all in all delectably delicious, our raw and organic Botija Olives are perfect for eating out of hand and as ingredients in such gourmet raw dishes as The Zucchi-ghetti with Marinara Sauce (click here to go to our free raw recipe section). Slightly tangy. Ingredients: Certified organic Botija Olives, Water, and Peruvian Sea Salt (not heat treated). Olives are hand-picked and salt cured in large sterilized food grade barrels at low temperatures, with the Peruvian Sea Salt acting as a natural preservative. The water comes from a pure underground spring. Not pitted. Net weight: 15.7 oz.

Raw & Organic Jumbo Green Olives (pictured in the middle of photo above):

Tangy, slightly crunchy, with a full-bodied flavor, our raw & organic Jumbo Green Olives are reminiscent of the very best Mediterranean -- notably Italian -- green olives but grown and processed the time-honored way without chemicals or pesticides of any kind.
